The Worlds best Cheese Burger

Numyummy. This makes about 10 or 12 1/4 pound burgers. For best results I also recommend making your own buns/rolls.

1/2lbs very lean ground or go to your local butcher and have something close to sirloin ground up
1/2lbs very fatty ground or go to butcher and have him grind some chuck
1/2lbs ground lamb
2 tbls kosher salt divided in 1/2 (my taste salt to your own liking, I just like well seasoned beef)
Fresh cracked pepper corns to taste I use about 10 or 12 pepper corns and smash them in a pestle
1/2 onion (sweet)

Sauté the onions over med heat in olive oil till they sweat and set aside

Combine the ground 1/2 of the salt and all of the pepper and need together then separate into patties. Sear on high heat direct grill to taste (turn about every 1.5 minutes.) cook time is about 8 minutes depending on preference. Salt the patties (to taste) and let set for five minutes then serve.

Serve with the grilled (sautéed) onions, chipotle, French fried onions, fresh leaf or romaine lettuce, tomatoes, crumbled blue cheese, and anything else you like.
